Tiny Teddies is a nursery and childrens holiday fun club based in Radford, Tile Hill and Whitley caring for children aged 6 weeks to 11 years.

Christmas Cookery with Tiny Teddies Day Nursery

Christmas is the perfect time to be creative with your children.  The days are short, the cold discourages playing outside, and making crafts will keep your children busy and take away some of their impatience and excitement while they wait for Christmas Day to arrive.

Tiny Teddies Day Nursery have sent us a fantastic recipe for some Spicy Christmas Biscuits! They make a great gift, and look fabulous tied with a ribbon to the tree!

Ingredients

225g/8oz/2 cups plain flour

1/2 tsp baking powder

2 tsp ground mixed spice, ginger or cinnamon

115g/4oz/1/2 cup butter

85g/3oz/1/3 cup caster sugar

1 egg

1 small egg white

85g/3oz/3/4 cup icing sugar

5 easy steps!

1. Pre-heat the oven to 180 C/350 F/Gas Mark 4.

Lightly grease two baking sheets.

2. Sift the flour, baking powder and spice into a mixing bowl.  Cut the butter into small cubes with a dinner knife and rub them into the flour with your fingertips until the mixture resembles breadcrumbs.

3. Lightly beat the egg with a fork. Stir in the sugar with a wooden spoon, then add the beaten egg mixture to the flour mixture and mix to form a soft dough.

4. Sprinkle the work surface with a little flour and roll out the dough until 6mm/1/4in thick.  Cut out shapes with the biscuit cutters.  Put the biscuits slightly spaced apart on the baking sheets.  Bake for 10 minutes, until pale golden.

5.  Meanwhile, beat together the egg white and icing sugar with a fork.  Using a pastry brush, brush the mixture over the tops of the biscuits – take care as the trays will be hot.  Return them to the oven for 5 minutes, unitl crisp and golden.  Transfer to a wire rack to cool.

TIP!!!!!

If you want to hang the biscuits on a Christmas tree, make a hole in the top of each biscuit with a skewer before baking them.  once the biscuits have cooled, thread them on ribbons and hang on the tree.  The biscuits will last for up to 1 week.
